3 Tips to Ramp up your salads!

1. Use more Fat. Olive oil or avocado or BOTH! Research from Ohio State University found that more fat I your salad helps your body absorbs more antioxidants from the ingredients in your salad! 😮
2. Splurge on a quality vinegar. The vinegars from speciality stores go a long way and make any salad exciting and more tasty.
3. Eat your salad with chop sticks! Stop stabbing your salad and refine your chop stick skills! It's so much easier once you get the hang of it.
4. Bonus: make sure it's pretty. Lots of colors of the rainbow means all kinds of different nutrients.

Coconut, Chia and Chocolate Shakeolgoy Recipe!

The BEST pudding recipe ever! Keep in mind, I LOVE fat! It's so so good for you! Make 2 batches because your kiddos will want some too!
8 ounces Coconut Milk
1.5 scoops Chocolate Shakeology
1 Cup Filtered Water
3 TBLS Chia
1 TBLS Flax
Mix together and put in fridge for 4 hours. Then enjoy!

Crisp and Fresh Veggie Noodle Salad!

Vietnamese Bun.  Veggie and noodle salad.

Gluten Free, Dairy Free and delicious!
 

This is a simplistic and refreshing meal.  I use some ingredients that you may have not used before!  This recipe is gluten free and dairy free.  Comment below and be sure to subscribe so you get the latest and greatest recipes from me! 




The salad:
You can add as much or little of these flavors as you would like.  Keep in mind, I added all the flavors together because they complement each other very well!


  • 1 Package of 5mm or larger, Gluten Free Rice Noodles.  Cool as per package
  • ½ Head of Green Leaf Lettuce Julienne        (see my video on how to do this simple and very quick cutting technique!  Don’t worry about being perfect!)   



  • Purple Mint, Julienned
  • Asian Basil, Julienned
  • Mung Bean Sprouts (rinsed and drained)
  • Pickled Carrot (click here for recipe)
  • Cilantro Leaves (stems may add a more bitter taste and throw the texture of the dish off)
  • Cucumber cut ½ Moon or Matchstick

Dressing: Proportions for 1 serving.  We usually use 3 servings.

  • 1 T. Sugar
  • 2 T. Warm Water
  • 2 T. White Vinegar
  • 3 T. Fish Sauce

Recipe for Meat and Marinade:

  • 2.5 pounds pork butt sliced ¼ inch.  (optional)
  • ¼ Cup Sugar
  • 1 T. Fish Sauce
  • 1 T. Sesame Oil
  • 1 T. Gluten Free Hoisin Sauce
  • 1 T. Gluten Free Soy Sauce
  • 1 Garlic clove, crushed
Directions: Let pork Marinade for 3 hours.  Cool quickly on a high heat grill!  You want that yummy char to bring out the sweetness!

Add everything together!!

5 Practical Ways to Create Active and Happy Kids!
Take away the screens and get ready to watch your kiddos move and shake.  These activities are not only great for their health and FREE but they will create memories for your entire family.  You know you want to be the cool mom! 
 I know you want the best for your Children, here are just a few benefits of keeping them active through movement…
  • ·       Think more clearly
  • ·       Learn Quicker
  • ·       Adapt faster
  • ·       sleep better
  • ·       recover from illness quicker
  • ·       Positive and enthusiastic outlook on life!


1.  Freeze Dance Party!
Turn on some fun and loud music and have them dance their bum bums off.  Periodically throughout the party, turn off the music.  When the music is off, they have to freeze.  They return to their grooving once you turn the music on again.
2.  Create Active Tasks  
I will write a 'to do' list of tasks that help around the house.  Once they complete a task, they cross it off the list, pick a sticker to put on the list and I time them on how quickly then can complete 8 burpees.  They try to beat their time from the previous task burpees.  It's gold!
3.  Create an obstacle course!  
This may be the personal training coming out in me but this is fun and really gives them a great workout.  I keep it light and fun!  
You can do this inside or outside!  For example on Saturday morning we were outside and it was a beautiful day.  We wanted to do something different than the regular bike ride so… we got creative.
1.     START: in the driveway
2.     run to a tree and swing on the branch
3.     run up to the front porch and write their entire name in chalk
4.     run to the mail box and they throw a ball at the open mailbox until they get it in!
5.     run back to the starting point and bust out 10 Jumping Jacks
4.  Sprint Blitz!  
We go for a walk and I time them as they sprint from mail box to mail box. I find that timing them really gets them going!
5.  Turn off the Screens and Leave Them Alone. 
I’m not saying leave the house!  Just let them think, create and explore for themselves
If they get bored enough and are encouraged to use their imagination, they will have fun with a box.   This will encourage them to find ways to be active around the house.  It will also spark their creativity, imagination and allow original thinking to blossom.
Maybe you will need to guide them to get them started.  Give them some ideas and then let them think on it.  You will be amazed at what they come up with!
When they get bored I ask them, ‘If you could do anything in the world you want to do right now, what would it be?”  Many times it’s an activity like swimming, American Ninja Warrior or Fishing.  Many activities can be simulated through play time and imagination at home. 
For example, they will create their own swimming pool made of pillows and practice their jumps.  They can make their own American Ninja Warrior Obstacle Course or even build a boat in the ocean and pretend to fish and fight the waves.
